3 Gin Cocktails That Are Spring in a Glass

These simple yet stylish recipes, created by Tarquin's Cornish Gin, are the next best thing to sunset cocktails overlooking the sea


From a windy cliff-top in North Cornwall, Southwest Distillery produces some of the world’s best gin. In addition to their namesake, Tarquin’s Cornish Dry Gin, they have added several delicious flavoured gins and hand-crafted spirits to the mix over the years. Each one is inspired by the wild Cornish coast.

Started in 2013 by Tarquin Leadbetter, the distillery uses traditional artisan methods to craft its tiny batch gins. Proudly Cornish, the business is currently supporting the local community by lending its time and skills to making hand sanitiser for Cornwall’s NHS, police and food banks. Tarquin’s Cornish Dry with Mediterranean Fever Tree Tonic, Garnished with Red Grapefruit and a Sprig of Thyme

  • Fill a large goblet glass with ice
  • Add 50ml (double-shot) of Tarquin’s Cornish Gin
  • Top up with Fever Tree Mediterranean Tonic
  • Garnish with a slice of red grapefruit and a sprig of thyme

Tarquin’s Rhubarb and Raspberry Gin with Prosecco, Garnished with a Fresh Raspberry and a Sprig of Mint

  • Place 2-3 ice cubes in a champagne flute
  • Add 25ml of Tarquin’s Rhubarb and Raspberry Gin
  • Top up with Prosecco
  • Garnish with a fresh raspberry and a sprig of mint

Tarquin’s Blackberry and Fever Tree Sicilian Lemonade, Garnished with a Blackberry and a Sprig of Mint

  • Fill a large goblet glass with ice
  • Add 50ml (double-shot) of Tarquin’s Cornish Blackberry Gin
  • Top up with Fever Tree Sicilian Lemonade
  • Garnish with a couple of blackberries and sprig of mint
